Why soak green lentils?

Apparently, the outer shell of the lentil (and some grains) contains anti-nutrients that can interfere with digestion. The solution is to soak them, thereby neutralizing the antinutrients. Then drain the water and rinse the lentils again with fresh, cold water and you are ready to cook.

Should green lentils be soaked before cooking?
